One of my favorite vegetarian dishes which goes well with roti or rice or poori, I prefer roti than others.

In some Asian countries and Africa they say that Okra will increase your intelligence(they say this to make kids eat more because okra is healthy).
I am not sure if it really helps brain but I love this dish because of the taste.

Try this and let me know if you guys like it.

Ingredients:

  1. Okra 175 grams
  2. Onion small – 1
  3. Tomato small – 2 or3
  4. Cumin seeds – 1 teaspoon
  5. Mustard seeds – 1 teaspoon
  6. Ginger Garlic paste – 1/2 teaspoon
  7. Turmeric – 1/4 teaspoon
  8. Chilli powder – 1/3 teaspoon
  9. Cumin powder – 1/3 teaspoon
  10. Coriander powder – 1/3 teaspoon
  11. Garam masala – 1/3 teaspoon
  12. Fresh coriander leaves
  13. Salt to taste
  14. Oil

Method:

Firstly, chop onions, tomatoes and okra into small pieces and keep it aside.

In a pan put some oil and heat it on medium flame and when it is hot add cumin seeds and mustard seeds.
When mustard seeds flutter(don’t burn) add onions and fry them until translucent.

Now add ginger garlic paste, turmeric and cook until raw flavor goes away i.e few minutes 2-3.

Now add tomatoes and let them cook until they are soft and squishy. Now add the main ingredient which is okra and let it cook for 5-10 minutes untill they are soft but not mushy.

The last stage add all the spices and let it cook for few more minutes. Taste it and see if it needs more spices or salt. Add according to your taste.
The ultimate Okra is ready to be enjoyed with Roti/rice/poori of your choice. I tried it with couscous and it was not bad but I prefer roti.

Note:

  1. If you like bit more spicy food make 1/3 – 1/2 spoon for the spices
  2. You can also cook without the tomato as well which is called okra fry. By adding tomato it gives bit gravy.
  3. You can also cook on high heat which cooks faster but keep an eye and keep stirring so that it won’t burn.
  4. If you are frying then definitely cook on high heat.
